  • For The Creamy Mashed Potatoes:

  • 400g potatoes (Maris Piper or King Edward work best)
  • 25g butter
  • 50ml whole milk or cream
  • Salt and white pepper to taste
  • For The Seasonal Vegetables:

  • 100g carrots, peeled and cut into batons
  • 100g green beans, trimmed
  • 75g peas (fresh or frozen)
  • Knob of butter
  • Fresh mint leaves, chopped (optional)
  • For The Gravy:

  • 150ml good quality lamb or vegetable stock
  • 1/2 tablespoon plain flour
  • 1/2 tablespoon redcurrant jelly (optional, but recommended)
  • Fresh rosemary sprig
  • Add To Basket:

Preparation

Step 1: Roast Your Lamb

Place the lamb rumps on a roasting tray and cook in the oven until they are done. For the best results, use a meat thermometer to check the internal temperature.

Step 2: Prepare The Mashed Potatoes

While your lamb is cooking, peel and chop your potatoes into evenly sized chunks. Place in a large pan of cold, salted water and bring to the boil. Simmer until the potatoes are tender and easily pierced with a knife.

Drain the potatoes thoroughly and return them to the pan. Add the butter and warm milk or cream, then mash until smooth and creamy. Season generously with salt and white pepper. Keep warm until ready to serve.
