A cow's foot does not have a great deal of tender meat, but when it is slowly simmered the fibres of the foot soften and the flesh can be removed from the bone. Cow's feet are primarily used for making stock or stews/soups due to their collagen content.

Caribbean-Style Cow Foot Soup with Roots & Greens


Cow foot - often lean on muscle but rich in gelatinous texture - makes for a nourishing, hearty soup when simmered slowly. This one-pot wonder combines tender cow foot with root vegetables and aromatic spices, perfect for warming up the family. Serve it with a side of crusty bread or over fluffy rice to soak up that flavorful broth. You could also round it out with a crisp green salad for a lighter contrast.

Ingredients (Serves 6–8):

  • 3 to 3½ lb cow foot, cleaned and chopped

  • 1 lb yam or plantain, peeled and diced

  • 1 large onion, diced

  • ½ cup celery, diced

  • 2–3 green onions, chopped

  • 3 sprigs thyme

  • 1 tsp white pepper

  • 1 tbsp smoked paprika

  • 1 tbsp minced garlic

  • ½–1 tsp cayenne pepper (optional, to taste)

  • 1–2 carrots, sliced

  • 1 tbsp chopped parsley (or substitute fresh herbs)

  • 1 scotch bonnet pepper, whole (optional, for heat)

  • Salt and pepper, to taste

  • Oil for sautéing

Instructions:

  1. Prepare the sofrito: Heat a large pot over medium heat with a splash of oil. Sauté onion and celery until fragrant (~2 minutes). 

  2. Spice it up: Stir in smoked paprika, garlic, cayenne (if using), thyme, white pepper, and some salt. Cook briefly to release aromas. 

  3. Add the cow foot: Gently stir in the chopped cow foot to coat with the spices, then pour in enough water (about 8–10 cups) to just cover. Bring to a boil, then reduce to a simmer. 

  4. Simmer gently: Cover and cook for 2–3 hours, until the cow foot is meltingly tender and the broth is richly flavored. 

  5. Finish with veggies: In the last 30 minutes, add diced yam (or plantain) and carrots. Include the scotch bonnet whole for mild heat (burst it later if you want more kick). Stir occasionally. 

  6. Herbal finish: Just before serving, stir in green onions and parsley. Adjust seasoning to taste.

Seasoning & Serving:

  • Seasoning tips: Taste before serving and adjust salt, pepper, or heat. If you added the scotch bonnet whole, you can break it up slightly for more spiciness.

  • Serving ideas: Ladle the soup into bowls and serve with crusty bread to soak up the gelatinous broth or over rice for a heartier meal. A side of sautéed greens or a fresh salad makes a lovely balance.
