Citrus‑Chipotle Flat‑Iron Steak Tacos
This family‑friendly taco recipe makes the most of flat‑iron steak, a well‑marbled, tender cut from the shoulder that stays juicy and flavorful when thinly sliced. Paired with vibrant pico de gallo, creamy guacamole, and warm tortillas, it’s a satisfying meal perfect for Taco Tuesday or casual gatherings.
Ingredients (serves 4–5):
For the steak & marinade

450 g (1 lb) flat‑iron steak

⅓ cup fresh lime or orange juice
-
¼ cup olive oil
-
1–2 garlic cloves, minced
-
1 tbsp chopped fresh cilantro (optional)
-
1 tbsp ground cumin
-
1 tsp chili powder or chipotle powder
-
½ tsp kosher salt
-
¼ tsp black pepper
Toppings & assembly
-
8–10 corn or flour tortillas
-
½ cup pico de gallo (tomato, onion, cilantro, lime)
-
½ cup guacamole or sliced avocado
-
Lime wedges, chopped cilantro, diced onion, salsa, shredded cheese (optional)
Instructions:

Marinate the steak
In a resealable bag or bowl, whisk together citrus juice, olive oil, garlic, cilantro (if using), cumin, chili powder, salt, and pepper. Add steak, coat well, and refrigerate for at least 1 hour, ideally up to 4 hours for deeper flavor -
Cook the steak
Remove the steak from the marinade and pat it dry. Heat a skillet or grill over high heat—add a little oil. Sear steak 4–5 minutes per side (depending on thickness) for medium‑rare. Use a meat thermometer if desired: target 55 °C (130 °F), as it will carry over to around medium‑rare to medium -
Rest and slice
Transfer the steak to a cutting board, tent with foil, and rest for 5–10 minutes. Then slice thinly against the grain and optionally dice. -
Warm tortillas
Heat tortillas in a dry skillet or on the grill for about 30 seconds per side until warm and pliable. -
Assemble tacos
Layer sliced steak on each tortilla, then top with pico de gallo, guacamole, cilantro, onion, lime juice, and any other favourite toppings.
Seasoning & Serving:

For extra flavor, sprinkle tacos with a pinch of sea salt or cotija cheese.

Fresh lime juice brightens the dish and ties together the smoky meat with fresh toppings.
