Garlic & Rosemary Roasted New Zealand Leg of Lamb

Ingredients

  • 1 full New Zealand Leg of Lamb (approx. 2.0 kg)
  • 4 garlic cloves, minced
  • 3 tbsp fresh rosemary, finely chopped
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 2 tsp sea salt
  • 1 tsp freshly ground black pepper
  • 1 kg new potatoes, halved
  • 500 g baby carrots, peeled and trimmed
  • 2 tbsp olive oil (for roasting veg)
  • Fresh rosemary sprigs (for garnish)

Prep Time: 20 minutes
Cook Time: ~1 hour 40 minutes

Method:

1. Bring To Room Temperature
Take the lamb out of the fridge 1 hour before cooking. Preheat your oven to 200°C (180°C fan).

2. Make The Flavour Paste
In a bowl, mix garlic, rosemary, olive oil, Dijon mustard, salt and pepper. Using a sharp knife, make small incisions in the lamb and rub the mixture all over, pressing it into the cuts.

3. Roast The Lamb
Place the lamb on a rack in a roasting tray. Roast for about 1 hour 30 minutes (for medium-rare), or until the internal temp reaches 55°C (60°C for medium). Adjust based on your preference.

4. Add The Veggies
Halfway through cooking, toss potatoes and carrots in olive oil, season, and place them around the lamb in the tray. Let them roast alongside the meat.

5. Rest Before Carving

Remove the lamb and let it rest, covered loosely with foil, for 15–20 minutes.

6. Serve & Enjoy
Slice and serve with the roasted veg. Add fresh rosemary for garnish and accompany with mint sauce or gravy for the perfect Easter feast.
