
Hearty Winter Beef Stew
Ingredients
- 1 kg stewing steak (from Cleaver Meats Ltd Winter Warmer Pack), cut into 2.5cm cubes
- 2 tbsp plain flour
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 3 garlic cloves, finely chopped
- 2 large carrots, peeled and sliced
- 3 celery sticks, chopped
- 1 tbsp tomato purée
- 1 litre beef stock
- 200ml Guinness or any stout beer
- 2 bay leaves
- A few sprigs of fresh thyme
- Salt and freshly ground black pepper
- Fresh parsley, chopped (for garnish)

Packed with tender stewing steak and flavourful vegetables, it's a meal that's both satisfying and easy to prepare. Pair it with some crusty bread or creamy mashed potatoes and you've got a classic family dinner that everyone will love.

Cooking Instructions
Prepare The Beef: Toss the stewing steak cubes in the plain flour, making sure they are evenly coated. This helps to thicken the stew and give the beef a lovely crust.
Brown The Meat: In a large, heavy-based casserole pot, heat the vegetable oil over medium-high heat. Add the beef in batches, searing each side until browned. Remove the beef and set aside.
Cook Vegetables: In the same pot, add a little more oil if needed, then sauté the onion, garlic, carrots, and celery for about 5 minutes, or until they start to soften.
Add Flavour: Stir in the tomato purée and cook for another minute. This adds a rich depth of flavour to the stew.
Deglaze & Simmer: Pour in the beef stock and stout, scraping up any bits stuck to the bottom of the pot. Return the browned beef to the pot, along with the bay leaves and thyme. Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for 2 to 3 hours. The longer it cooks, the more tender the beef will become.
Season & Serve: Season the stew with salt and freshly ground black pepper to taste. Remove the bay leaves and thyme sprigs before serving. Garnish with fresh parsley and serve hot with mashed potatoes or crusty bread.
