Spiced Lamb Sausage Stew With Chickpeas: A Bonfire Night Showstopper!

Ingredients

  • (Serves 4)

  • 1 pack Lamb & Mint Sausages (8 sausages, 800g pack)
  • 2 tablespoons vegetable or olive oil
  • 2 medium onions, thinly sliced
  • 1 red bell pepper, deseeded and sliced
  • 3 garlic cloves, finely chopped
  • 1 cinnamon stick (or 1 teaspoon ground cinnamon)
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried chilli flakes
  • 400g tin chopped tomatoes
  • 6-8 pitted dates, roughly chopped
  • 400g tin chickpeas (retain the liquid)
  • Salt and freshly ground black pepper
  • Small handful fresh coriander, chopped (plus extra for garnish)

This flavourful stew combines the succulent taste of our handmade lamb sausages with warming spices, sweet dates, and protein-rich chickpeas to create a meal that's both exotic and comforting. Best of all, it comes together in just 30 minutes - making it perfect for busy weeknights or last-minute Bonfire Night gatherings.

The beauty of this recipe lies in its simplicity. By using our premium quality sausages instead of traditional slow-cooked lamb, you achieve deep, complex flavours in a fraction of the time, without sacrificing any of the authentic taste.

Preparation

Step 1: Sear The Sausages

Heat the oil in a large, heavy-based pan or casserole dish over medium-high heat. Once hot, add the lamb sausages and cook for approximately 5-6 minutes, turning regularly until they're golden brown on all sides. Transfer the browned sausages to a plate and set aside - they'll finish cooking in the stew later.

Step 2: Soften The Vegetables

Reduce the heat to medium-low. Add the sliced onions and red pepper to the same pan, using the flavourful oil left from the sausages. Cover with a lid and allow them to cook gently for 3-4 minutes, stirring occasionally, until they've softened but haven't taken on any colour.

Step 3: Build The Spice Base

Remove the lid and add the chopped garlic, cinnamon stick, ground cumin, smoked paprika and chilli flakes to the pan. Stir continuously for about 2 minutes, allowing the spices to release their aromatic oils. If the mixture begins to stick, add a small splash of water to prevent burning.

Step 4: Create The Stew

Return the browned sausages to the pan. Add the tinned tomatoes, chopped dates, and the entire tin of chickpeas including all the liquid (this adds body and creaminess to the stew). Season generously with salt and black pepper. Increase the heat and bring the mixture to a rolling boil.

Step 5: Simmer To Perfection

Once boiling, reduce the heat to low, cover with the lid, and let the stew simmer gently for 15 minutes. Stir occasionally to prevent sticking and ensure even cooking. The sausages will finish cooking through whilst the sauce thickens and the flavours meld together beautifully.

Step 6: Finish & Serve

Remove from the heat and stir through the chopped fresh coriander, reserving a little for garnish. Taste and adjust the seasoning if needed. Serve in warmed bowls with a sprinkle of fresh coriander on top.
