Ingredients

  • 8 Minted Lamb Kofta Kebabs from Cleaver Meats Ltd
  • 4 flatbreads or pita breads
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 200g cherry tomatoes, halved
  • Fresh mint leaves
  • 200g Greek yoghurt
  • 1 lemon (for zest and juice)
  • Olive oil
  • Salt and pepper to taste

Cooking Instructions

Prepare The Grill:

Preheat your BBQ to medium-high heat.

Grill The Kebabs:

Brush the kebabs lightly with olive oil. Place them on the BBQ and cook, turning occasionally, until they are evenly browned and cooked through.

Prepare The Sauce:

In a bowl, mix Greek yoghurt with lemon zest, a squeeze of lemon juice, salt, and pepper. Add a handful of chopped mint leaves and stir well.

Toast The Bread:

Lightly brush the flatbreads or pita breads with olive oil and toast them on the BBQ on each side until warm and slightly charred.

Assemble:

Place the grilled kebabs on the toasted flatbreads. Top with cucumber slices, red onion, and cherry tomatoes.

Serve:

Garnish with additional mint leaves and serve immediately with a side of lemon wedges. Enjoy your BBQ with these delicious Minted Lamb Kofta Kebabs!
