15-Minute Honey Garlic Chicken Bites

This recipe uses diced boneless chicken breast—perfect for speedy cooking and soaking up that irresistible honey-garlic sauce. Paired with steamed rice and a green veggie (like broccoli or green beans), it turns into a full, comforting family meal with virtually no extra effort.

Ingredients (serves 4):

  • 1½ lb (about 700 g) boneless, skinless chicken breasts, cut into small cubes

  • 2 teaspoons extra-virgin olive oil (or canola oil)

  • Salt & freshly ground black pepper, to taste

  • 3 tablespoons honey

  • 3 tablespoons low-sodium soy sauce

  • 3 cloves garlic, minced

  • Optional: ¼ teaspoon red pepper flakes for a bit of heat

  • For serving: steamed white or brown rice, sliced green onions, sesame seeds, lime wedges

Instructions:

  1. Prep the chicken & pan: Heat oil in a large skillet over medium-high heat. Season chicken cubes lightly with salt and pepper.

  2. Brown the chicken: Add the chicken to the skillet and cook until golden on one side, about 3–4 minutes.

  3. Make the sauce: While chicken cooks, whisk together honey, soy sauce, garlic, and red pepper flakes (if using).

  4. Finish cooking: Flip chicken pieces, pour in sauce, then toss to coat. Cook for another 4–5 minutes, until the sauce is sticky and the chicken is cooked through—but be careful not to overcook.

  5. Serve: Spoon over steamed rice, sprinkle with green onions and sesame seeds, and finish with a squeeze of lime if liked.

Seasoning & Serving:

  • Seasoning: The balance of sweet honey, savoury soy, and garlicky aromatics makes this sauce irresistible—add red pepper flakes only if your family enjoys a touch of heat.

  • Serving suggestions: Serve alongside steamed rice and a green vegetable (broccoli, green beans, or snow peas). Leftovers stay great for up to 4–5 days in the fridge and are fantastic reheated.

Cooking

There are so many different ways to cook chicken.

You can stir-fry, grill, pan-fry, BBQ or roast chicken.

Stir-fry.

If you want to stir-fry chicken, breasts or boneless thighs are the most ideal cuts to use. Use a sharp knife to cut the breast or thigh into thin slices.

Heat your pan to a high heat. Add a little oil to heat. Cook your slices until golden brown and  cooked through.

With stir-frying, its best to add the chicken in batches as adding too much meat at once reduces the temperature of the wok, meaning the chicken will stew in its own juices rather than cook quickly and brown with a lovely natural caramel flavour.

Grilling/BBQ

If you would like to grill or BBQ chicken, choose breast, thighs and drumsticks.  If you are using the BBQ you can char-grill both sides for colour and flavour and then place in the oven to cook through thoroughly with moderate heat.

Or you could start your chicken in the oven to make sure its evenly cooked before finishing it off on the BBQ for taste and flavour.

Pan-frying

To fry chicken, the ideal cuts for this are chicken breast & boneless chicken thighs. These are the parts that are small enough to cook through without the outside overcooking and burning.

To fry chicken breasts, heat a frying pan on medium heat. Add small drop of oil and allow to heat through. Place the chicken breast in the pan and allow to cook until brown and golden. Turn over and repeat until chicken breast is cooked through.

Baking/roasting

For roasting wings, drumsticks, chicken thighs & whole chickens are best. As these cuts have a bone in the centre, it takes these cuts longer to cook all the way through.

By baking, the chicken will be cooked evenly heat all the way through, while gently cooking the skin at the same time.
