Pork leg is one of the best cuts for roasting. Preferably with a thick layer of fat. Though many people shy away from joints with fat, it adds flavour and helps keep the joint moist while cooking. There's always plenty of crackling on leg of pork joints.
The best way to cook your leg of pork is roast it oh high 200C/180C gas 6 for 35 to 40 minutes, or until you have crisp crackling, then turn the oven down to 170°C/325ºF/gas 3. Slow-cook the leg for 3.5 hours, or until the meat is easily pulled apart.
