Fresh chicken fillets. Easy to use quick to cook, high in protein and low in fat. Healthy, affordable and versatile, chicken is the meat protein that has the least environmental impact, so not only is it good for you, it’s better for the environment than other meat protein sources.
Chicken fillets (boneless, skinless) are perfect for this British favorite, where juicy chicken is topped with savory bacon, rich BBQ sauce, and melted cheese. It’s a hearty dish that pairs perfectly with crispy fries or a fresh salad for a complete family meal.
4 boneless, skinless chicken fillets (about 600g)
4 rashers of smoked bacon
150g grated cheddar cheese
200ml BBQ sauce (your favorite brand or homemade)
2 tbsp olive oil
Salt and pepper, to taste

Oven-baked fries: 4 large potatoes cut into fries, tossed with olive oil, salt, and paprika, baked at 220°C (430°F) for 25-30 minutes until golden.
Mixed salad or steamed vegetables.
Preheat your oven to 200°C (390°F).
Season the chicken fillets with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Cook the bacon until crispy, then remove and set aside on paper towels.
In the same skillet, sear the chicken fillets for 3-4 minutes on each side until golden but not fully cooked.
Place the chicken fillets on a baking tray. Spoon a generous layer of BBQ sauce over each fillet.
Top each fillet with a slice or two of crispy bacon, then sprinkle with grated cheddar cheese.
Bake in the oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Meanwhile, bake the fries according to the instructions above and prepare your salad or veggies.
Seasoning tip: Add a pinch of smoked paprika to the BBQ sauce for extra depth.
Serving: Serve each chicken fillet hot with fries and a side salad or steamed greens. Drizzle any extra BBQ sauce on top for more flavor.
You can stir-fry, grill, pan-fry, BBQ or roast chicken.
If you want to stir-fry chicken, breasts or boneless thighs are the most ideal cuts to use. Use a sharp knife to cut the breast or thigh into thin slices.
Heat your pan to a high heat. Add a little oil to heat. Cook your slices until golden brown and cooked through.
With stir-frying, its best to add the chicken in batches as adding too much meat at once reduces the temperature of the wok, meaning the chicken will stew in its own juices rather than cook quickly and brown with a lovely natural caramel flavour.
If you would like to grill or BBQ chicken, choose breast, thighs and drumsticks. If you are using the BBQ you can char-grill both sides for colour and flavour and then place in the oven to cook through thoroughly with moderate heat.
Or you could start your chicken in the oven to make sure its evenly cooked before finishing it off on the BBQ for taste and flavour.
To fry chicken, the ideal cuts for this are chicken breast & boneless chicken thighs. These are the parts that are small enough to cook through without the outside overcooking and burning.
To fry chicken breasts, heat a frying pan on medium heat. Add small drop of oil and allow to heat through. Place the chicken breast in the pan and allow to cook until brown and golden. Turn over and repeat until chicken breast is cooked through.
For roasting wings, drumsticks, chicken thighs & whole chickens are best. As these cuts have a bone in the centre, it takes these cuts longer to cook all the way through.
By baking, the chicken will be cooked evenly heat all the way through, while gently cooking the skin at the same time.
