Hearty Beef and Vegetable Stew


Lean diced beef is a versatile cut perfect for slow-cooked meals that bring out rich flavors while staying tender. This beef stew combines the lean meat with hearty vegetables and a savory broth, making a comforting meal ideal for family dinners. Serve it with crusty bread or creamy mashed potatoes, or enjoy it on its own as a wholesome bowl.

Ingredients:

  • 1 lb (450g) lean diced beef

  • 2 tbsp olive oil

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 3 carrots, peeled and chopped

  • 2 celery stalks, chopped

  • 3 medium potatoes, peeled and cubed

  • 4 cups beef broth

  • 1 cup frozen peas

  • 2 tbsp tomato paste

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 2 bay leaves

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the beef: Heat olive oil in a large pot over medium-high heat. Add the lean diced beef and brown it on all sides for about 5 minutes. Remove the beef and set aside.

  2. Sauté veggies: In the same pot, add onion, garlic, carrots, and celery. Cook for 5 minutes until softened.

  3. Build the stew: Return beef to the pot. Stir in tomato paste, thyme, rosemary, and bay leaves. Pour in the beef broth and bring to a boil.

  4. Simmer: Reduce heat to low, cover, and let simmer for 1 hour, stirring occasionally.

  5. Add potatoes and peas: Add cubed potatoes and frozen peas. Continue simmering for another 30 minutes, or until the beef and potatoes are tender.

  6. Season: Remove bay leaves, season with salt and pepper to taste.

Seasoning and Serving:

Serve hot, garnished with fresh parsley. Pair the stew with crusty bread to soak up the rich broth or creamy mashed potatoes for an extra comforting side.
